  • 230 g
    unsalted butter
  • 180 g
    brown sugar
  • 90 g
    Castor Sugar
  • 90 g
    Treacle sugar
  • 50 g
    Whole egg
  • 18 g
    egg yolks
  • 295 g
    cake flour
  • 2 g
    Bicarbonate of Soda
  • 2 g
    baking powder
  • 2 g
    fine salt

Preparation: Chocolate Chip Cookies

  • Melt butter, but do not heat completely.
  • Add the eggs, yolks and both sugars
  • Add the remaining dry ingredients.
  • Dough must rest for 30 minutes before it gets rolled & baked
  • Bake at 160°C for 8mins.

  • Heat the milk adding the hydrated gelatin ,then add the couverture – allow to cool
  • Then fold in the whipped cream 
  • Set in mould  
  • Freeze
