Vegan Brownie

Ingredients: Vegan Brownie

  • 140 g
    Be Better™ (Vegetable butter substitute)*
  • 185 g
    Callebaut NXT dairy-free Dark
  • 20 g
    Callebaut Mycryo®

Preparation: Vegan Brownie

Melt the chocolate, vegan butter and cocoa butter together.

Stir to a glossy consistency.

  • 175 cl
    water
  • 10 g
    Potato Protein
  • 5 g
    Citrus Fibre

Preparation: Vegan Brownie

In a jug blend the water, potato protein and citrus fibres together.

Ingredients: Vegan Brownie

  • 240 g
    sugar

Preparation: Vegan Brownie

Blend the sugar into this mix.

Add the potato protein mix to the melted chocolate mix and stir well.

  • 140 g
    plain flour
  • 5 g
    baking powder
  • 2 g
    xanthan gum
  • 5 g
    pectin
  • 25 g
    cocoa powder

Preparation: Vegan Brownie

Seive the flour, baking powder, xanthan gum, pectin and cocoa powder into the mix.

Stir the mix well.

  • 100 g
    Callebaut NXT dairy-free Milk

Preparation: Vegan Brownie

Add the NXT M_lk chocolate callets and fold in to the mix.

Pour into a 24cm square frame and bake at 165c for 25 minutes.

Cool completely before cutting.

Cut into 15 equal rectangles.

Vegan Buttercream

Ingredients: Vegan Buttercream

  • 300 g
    Be Better™ (Vegetable butter substitute)*

Preparation: Vegan Buttercream

Beat the vegan butter until it is smooth.

  • 300 g
    icing sugar

Preparation: Vegan Buttercream

Slowly add the icing sugar until it is all incorporated.

  • 150 g
    Callebaut Crema 811

Preparation: Vegan Buttercream

Add the 811 crema and beat into the mix.

Using a star nozzle pipe swirls of buttercream on top of the brownies.

    Mona Lisa Dark Chocolate Tagliatelli

Preparation: Vegan Buttercream

Decorate with mona lisa Tagliatelli.
