Preparation: Long live mr peanut

  1. Melt the chocolate and Cocoa Butter together and temper.
  2. Mix the peanut paste, roasted peanuts, salt and Croquant, then fold into the chocolate batter. 
  3. Pour evenly into moulds and allow to crystallize for 20 minutes.

Hi, Carima. Thanks for asking! Putting that ingredient in there is pretty sneaky, in my opinion! As best I can tell, it's similar to a Florentine. If you're in the US (as I am), I'm not sure what you might use as a ready-made substitute. This might be a good way to use up toffee shards or scraps of tuiles (like dentelles) or nougatine. Deviating from the recipe as written may affect the shelf life, so if you plan to sell these, you might want to verify the shelf life with a meter or by having them tested after you've created your own version.
