Chocolate Ice Cream

Ingredients: Chocolate Ice Cream

Preparation: Chocolate Ice Cream

  1. Pour the cream and milk into a pot and whisk in 100g / 3.5oz of sugar, cocoa powder, and salt. Stir until sugar and salt have dissolved. Warm until steam comes through
  2. Whisk together the yolks and the remaining sugar until uniform.
  3. Temper the dairy mixture. Combine the egg yolk mixture with the dairy mixture.
  4. Cook to nappe or 84°C (183°F)
  5. Pour over St. Domingue. Let sit until melted
  6. Immersion blend until smooth
  7. Strain into a bowl and cool in an ice bath
  8. Transfer to paco jet canister and freeze overnight
  9. Spin right before making the milkshake

Fudge Swirl

Ingredients: Fudge Swirl

Preparation: Fudge Swirl

  1. Combine the heavy cream with the brown sugar, bring to a boil
  2. Whisk in the cocoa powder until dissolved. Bring to a boil once more
  3. Pour mixture over the glucose syrup and chocolate
  4. Immersion blend to emulsify
  5. Add in the butter, vanilla extract, and salt
  6. Immersion blend once more
  7. Strain
  8. Cool and store in piping bag in the refrigerator

Preparation: Chocolate Milkshake

  1. Create a swirl throughout the glass using the fudge swirl in a piping bag.
  2. Place half of the paco jet contents of chocolate ice cream into a blender
  3. Blend with milk until desired consistency.
  4. Pour the milkshake into a milkshake glass and top it with whipped cream
  5. Place shavings around the whipped cream and top with a maraschino cherry
