Preparation: CIAMBELLA

In planetaria, amalgamare tutti gli ingredienti con la foglia fino a ottenere un impasto elastico.

Ingredients: CIAMBELLA

  • 250 g
    burro

Preparation: CIAMBELLA

Incorporare, coprire, lasciare lievitare.

Conservare in frigo per 12 ore. Realizzare delle ciambelle e friggere.

GLASSA

Ingredients: GLASSA

  • 75 g
    acqua
  • 150 g
    zucchero semolato
  • 150 g
    glucosio
  • 100 g
    latte condensato dolce

Preparation: GLASSA

Scaldare a 75°C.

Ingredients: GLASSA

  • 150 g
    Callebaut ® Finest Belgian Ruby Chocolate Ricetta N°RB1 (CHR-R35RB1)
  • 10 g
    burro di cacao
  • 6 g
    polvere di barbabietola
  • 70 g
    massa gelatinosa

Preparation: GLASSA

Scaldare e versare sugli altri ingredienti.

Mescolare bene.

Versare in un recipiente, sigillare con la pellicola e mantenere in frigo. Scaldare a 35°C prima di utilizzare. Lasciare raffreddare e glassare. Lasciare cristallizzare.
