  • 4.6 oz
    water

Preparation: Texas Pecan Praline Part A

  1. Place the roasted pecans on a sheet pan lined with a Silpat
  2. Make a caramel. At 116°C take out of the heat and pour over the pecans
  3. Wait until it sets and process in a robot coupe until a very smooth praline paste is obtained.

Ingredients: Texas Pecan Praline Part B

Preparation: Texas Pecan Praline Part B

  1. Melt cocoa butter and chocolate. Mix until fully incorporated.
  2. Add the Texas Pecan Praline and mix until combined.
  3. Then add the carbonated candy pouring over any silicone-shaped mold you like.
  4. Dip in chocolate or decorate
