  • 450 g
    unsalted butter
  • 420 g
    brown sugar
  • 80 g
    All purpose flour

Preparation: Goldie

Beat butter with Sugars and 25% of flour

Ingredients: Goldie

  • 300 g
    CHK‐R30GOLD‐E0

Preparation: Goldie

Incorporate the melted chocolate at 45C.

Ingredients: Goldie

  • 360 g
    whole eggs
  • 90 g
    glucose syrup DE 44

Preparation: Goldie

Slowly add the eggs and the glucose syrup.

  • 241 g
    All purpose flour
  • 6 g
    Maldon salt
  • 3 g
    Prova Vanilla Bean Paste

Preparation: Goldie

Add flour and mix just to combine.

Ingredients: Goldie

  • 200 g
    chopped pecans

Preparation: Goldie

Add pecans.

Note: could use any nut in there or you could do without nuts and replace with dried fruit.

Fill 390g for hollow tuve mold

Bake 165C convection oven vent closed.

We have finished with a Callebaut Gold Ganache.
