We can no longer ignore it: "plant-based" is booming! 
Know that plant-based pastry can be just as tasty or even better than traditional pastry. 

In this course, we will look at all aspects of replacing existing animal-based to plant-based ingredients. 

From mousse to sponge cake, crémeux to glazing every pastry will look and taste as good as its traditional version

As Chocolate Academy is part of the Barry Callebaut group and our focus is on professional chocolate processing, our courses are only open to professional bakers, pastry chefs, chocolatiers and catering chefs.
