Ganache

Ingredients: Ganache

Preparation: Ganache

  1. Boil the milk with the glucose, sugars and freshly grated ginger.
  2. Strain on top of the chocolate and emulsify
  3. Add the vegan butter and mix well.
  4. Bring the ganache at 31°C (87°F)
  5. Frame on top of guitar sheet previously covered with a thin layer of crystallized dark chocolate
  6. Cool at a temperature of 10°C (50°F) until it is hard enough to be cut with a guitar cutter.
  7. Enrobe with crystallized NXT DFD-55 and decorate with candied ginger.
