Hazelnut Ice Cream

Ingredients: Hazelnut Ice Cream

Preparation: Hazelnut Ice Cream

  1. Weigh all ingredients.
  2. Combine the wate and milk in a sauce pot.
  3. Combine and blend well all the dry ingredients.
  4. At 45°C, incorporate the blended dry ingredients.
  5. Mix.
  6. Pasteurize between 82°C and 85°C for 2-3 min.
  7. Incorporate the hazelnut paste paste.
  8. Cool rapidly to + 4°C.
  9. Maturation minimum 4 hours – best 12 hours.
  10. Mix and then churn between -7°C and -10°C.
  11. Store at - 18°C.

Hazelnut Crunchy Variegate

Preparation: Hazelnut Crunchy Variegate

  1. Melt the peanut butter, chocolate and coconut oil together.
  2. Mix in the remaining ingredients.
  3. Pour out onto lined sheet tray and separate into small pieces.
  4. Refrigerate for 10-15 minutes.
  5. Break into smaller pieces as desired for use.
  6. Store frozen.

Caramel Variegate

Ingredients: Caramel Variegate

Preparation: Caramel Variegate

  1. Combine the two ingredients together until smooth.
  2. Use as desired, swirling the caramel into the ice cream.
