Judith Lamontagne

Judith is the co-owner of Cotard chocolatier in Quebec and co-founder of L’Académie Cotard. She won first place in the Farinex Provincial Competition and is an artist, sculptor, and creator of taste and texture. Teaching, demonstrating, and paying attention to small details when making chocolate is a great way for her to share her daily passion. By showing the tricks of the hands and the subtleties of chocolate, she can demonstrate all the possible wonders that can be achieved.

Jeremy Monsel has had a passion for chocolate-making from a young age. He has been working alongside Christophe Morel for six years, constantly motivating him to improve and excel in his craft. Jeremy's ultimate dream is to reach the finals of the World Chocolate Masters. He describes himself as a creative craftsman and a dreamer at heart.

Charlotte Wang graduated from Le Cordon Bleu Tokyo and started her first job as a chocolatier in a hotel. After coming back to Canada and working in several different places, including pastry shops, restaurants, and hotels, she is now working as a pastry sous-chef in a Michelin-starred restaurant.

Francis Nguyen

Francis Nguyen is a Chef de Partie at the Metro Toronto Convention Centre. His culinary journey began on a family farm where coffee trees flourished under his parents' care. Immersed in the cultivation process, he developed a profound understanding of coffee's nuances and flavors. These early experiences ignited his passion for culinary arts. After relocating to Canada, he pursued formal training in France and Germany, where he delved into the intricate world of pastry.

Joel Latiff

Joel Latiff

Joel Latiff embarked on his culinary journey at the young age of 15 by working in kitchens. After attending culinary school, he switched to pastry and chocolate, where he discovered his love and passion for chocolate. He continued to learn the art of bonbons, showpieces, and desserts from his mentor and other pastry chefs and chocolatiers. He always strives to discover new and innovative flavors and techniques to amaze his customers. His passion for various art forms is most evident in his showpieces and chocolate creations.
