  • Showing how to do a proper casting of chocolate for pillar or element

  • Explanation of how does cocoa butter should be work in situations

  • How to spray cocoa butter on chocolate in different effects

  • Will have at least 20% of sculpting/modeling technique

  • Explanation of how to apply polishing technique on a showpiece

  • Basic explanation of cocoa butter and chocolate tempering

  • To provide previous competition experience and explain how to organise

  • Will demonstrate how to airbrush shading on sculpture.

  • All classes are held from 9.00am to 5.00pm SGT
  • Daily lunch provided for full day classes only. Halal or vegetarian meals are available upon request 
  • The Chocolate Academy Center in Singapore is not a Halal certified kitchen
