Ingredients: Pastry

  • 120 g
    unsalted butter
  • 80 g
    Sifted Icing Sugar
  • 170 g
    cake flour
  • 30 g
    cocoa powder
  • 30 g
    ground almonds
  • 2 g
    salt
  • 40 g
    eggs

Preparation: Pastry

  1. Using a kitchen aid with a peddle attachment beat the cubed butter , icing sugar, cocoa powder, almonds and salt-
  2. beat till resambles bread crumbs then add egg last. Beat till form a paste ( Do not over mix )
  3. Rest for a minimum of 30 minutes
  4. Roll the pastry to 3mm 
  5. Line the tartlet tin with the pastry and freeze it.
  6. Bake the frozen tartlets at 160°C for 20-25 minutes.

  1. Heat the cream, glucose, and zest in a saucepan.
  2. Pour the mixture over the chocolate and emulsify until smooth.
  3. Set it in the fridge
