Laurence has been the technical assistant of the Chocolate Academy Montreal since 2017. After studying nutrition, she started her pastry journey by joining the pastry program of École Hotelière de la Montérégie in 2015. She won second place at the Québec’s Best Pastry and Chocolate Apprentice in 2017 while winning first place for the best chocolate bonbon. Laurence was recruited by the Chocolate Academy Montreal right after. Since then, she’s been perfecting her skills alongside some of the best chefs in the world at the Academy, but most importantly, she’s been enjoying all the sharing valuable conversations this place offers. She’s passionate about food science, new processes and techniques and is able to pass down the knowledge to students while doing demos or classes.
