We are proud to announce that Chef Russ Thayer, from the Chocolate Academy in Montreal, will be hosting a course with us.

This esteemed Chocolate Academy chef is joining us in South Africa in August 2024, he will be hosting a course covering an array of confectionery chocolate creations.

Chef Russ has robust knowledge of confections, pastry and ice-cream.
He is a graduate of both the Pastry Arts and the Culinary Arts programs. Russ has won numerous gold medals in ACF-sponsored pastry competitions, and was a finalist in Cacao Barry’s L’Art du Chocolatier Challenge 2012.
Russ joined the Academy in 2014, gaining experience and inspiring chefs from Chicago to Montreal and across the world.
