Anyone who is thinking of becoming a chocolatier, or would like to learn the basic skills of working with chocolate.


What the workshop will cover:      
Dive right into working with chocolate! We improved and finetuned this Hands-On workshop that will help any beginner master crystallization techniques, dipping and molding, as well as introduce you to ganache and emulsion. Spend four and half days perfecting the fundamentals of working with chocolate. Discovering Chocolate is a great workshop for beginners and those wanting to gain a solid knowledge of chocolate.
The workshop will bring you to the wonderful world of chocolate and its application in confectionery through theoretical and Hands-On learning approaches. It is a good start to gain a complete fundamental knowledge of working with chocolate. You will learn about the chocolate making process and discovering the technology behind chocolate. The theory will include; ideal working and storage environments, how to handle chocolates, troubleshooting awareness and shelf-life considerations.
An emphasis will be the use of tempering machines rather than tempering by hand the last two days of the workshop.

By the end of the workshop you will have an in-depth knowledge of using chocolate. You will take home a selection of your creations to enjoy with your family and friends.
Workshop hours 08.30-16.00. On Friday workshop hours is 08.30 - 14.00
Max 12 people. Participants are going to work as a group on the station.

The curriculum includes beginner, advanced and specialized courses on chocolate processing and a range of techniques and applications - from molding, enrobing and sculpting to decorations and flavorings.

In addition to our Technical Advisors, the members of our Ambassador Club Chefs are also been in the CHOCOLATE ACADEMY™ center. This Club has more than 70 world renown Ambassadors. These Ambassadors help us test and develop new products and recipes, additionally they help us for our costumer trainings.
