Learn with Chef Ileene how to make entremets her way - with limited equipment. As pastry chefs know, every kitchen is different and typically the pastry department is often forgotten. During this demo, you will learn how to become more adaptable in less-than-ideal spaces in order to increase your confidence in any kitchen situation while also learning some of Chef Ileene's signature recipes.
Chef Ileene has a vetted resume working in places like The Nomad, Betony, L’appart, and was most recently the pastry chef of the Noortwyck located in West Village. Currently she is leading a new venture, “Cho’s Bakeshop,” where she is focusing on customer packaged goods like her iconic brownies and cookies.
You will leave this demonstration with new fundamentals, recipes, and the experience of making entremets with limited resources. Stay after for networking and to taste Callebaut and Cacao Barry chocolates.
