During the World Chocolate Masters event held in Paris, " Chef Attila Menyhárt representing Hungary modified the classic 'langue de chat' recipe in a smart way to prevent the tuile from coloring. The butter is swapped for a cream which gives the tuile its light color. He is using a silicon stencil so that he gets very thin and consistent decorations."
