Modern Confectionary 2.0
Once you have mastered the basics of chocolate from Chocolate Initiation; you are ready to move on to Modern Confectionery Fundamentals. You will study all of the ingredients that are used in ganache and sugar confections as well as introducing you to ingredient science through practical approach. You will be able to understand the steps in emulsion, the basics of chocolate equipment and chocolate machines.
What to Expect
Over a three day course you will make complex, layered confections with delicious fillings and textures. This course is for the intermediate level chocolatier, with a firm understanding of the basics of chocolate.

Conditions for refunds:
The participant has the right to cancel their participation at any time. However, please note that cancellations are non-refundable. Instead, the participant may choose to transfer their registration to another available course. In case of cancelation the participant must submit a written request and send it by email to chocolate_academy_dubai@barry-callebaut.com
The Callebaut Chocolate Academy reserves the right to cancel or reschedule a course up to 20 days prior to its start date. In such cases, participants who have already paid will receive a full refund.
