The course is designed for anyone who is passionate in chocolate to professionals who
would like to set up a business in confectionery and catch the trends and opportunities of
the market. The courses will provide you with the mandatory platform of knowledge and
skills in chocolate works.  
The course will bring you to the wonderful world of chocolate and we will be focusing on
the application in confectionery through theoretical and hands-on learning approaches.
It is a good start to gain a complete fundamental knowledge and basic skills of working
with chocolate.  
You will learn:
- Theory of Chocolate making process
- Tempering (pre-crystallization) techniques (Seeding, Direct, Classic , Mycryo)
- Moulding and enrobing techniques
- How to perfectly seal moulded chocolates
- Introduction to ganaches and emulsions
- Colour spraying
- Possible problems and remedies
- Intro to the equipment

 Class size is from 8 to 12 people.
 Class is from 9:00 am to 17:00 pm- You will receive an email confirmation prior to
course date. 
 Lunch and apron will be provided. 
 Confirm your spot- full upfront payment is required prior to arrival.

Upon registration you will receive an email regarding course details to ensure you have

Dress code
The CHOCOLATE ACADEMY™ center will provide an apron.
You should bring your own chef jacket.
Long pants and ensure you wear comfortable closed shoes.
