  • 50 g
    œufs
  • 30 g
    Poudre de cacao Callebaut® (CP-E0-776)
  • 220 g
    farine

Preparation: Cocoa shortbread

Mix until homogeneous. Keep cool. Spread on Silpat to form thin 1.5 mm circles.
(3 per dessert). Bake at 160°C for 8 min. Sprinkle with Callebaut® Mycryo® (NCB-HD706-E0-W44).

Cut 1.5 and 3 cm diameter discs.

    35% de crème

Boil.

Heat until 85°C.

    Chocolat Sao Thomé d'origine unique Callebaut® (SAOTHOME-E4-U70)

Pour previous mixture over and mix.

    crème fouettée

Add at 45°C.

Soft caramel

    Sugar
  • 20 g
    glucose
  • 2 g
    fleur de sel

Make a caramel.

    crème

Use to deglaze caramel.

    masse de gélatine
  • 80 g
    Cacao Barry White Chocolate Zéphyr™ 34% (CHW-N34ZEPH-126)

Preparation: Soft caramel

Add and mix.

Mix and blend. Spread at 35°C.

Orange jelly

    jus d'orange
  • 50 g
    sucre en poudre
  • 10 g
    NH pectine

Preparation: Orange jelly

Boil.

Ingredients: Orange jelly

  • 200 g
    tranches d'écorce d'orange

Preparation: Orange jelly

Add and let cool.
