Lime Ganache

Ingredients: Lime Ganache

  • 200 g
    Cream 35% fat
  • 20 g
    Butter
  • 300 g
    MALCHOC-W
  • 2 g
    lime zest

Preparation: Lime Ganache

  1. Heat the cream with the butter at 85°C.
  2. Pour over the chocolate and mix it well using a hand blender.
  3. Add the lime zest.

Berries jam

Ingredients: Berries jam

  • 100 g
    Frozen blueberries
  • 300 g
    Frozen strawberries
  • 90 g
    Breza sugar
  • 5 g
    Pectin NH
  • 1 g
    Lemon zest
  • 10 g
    Lemon juice

Preparation: Berries jam

  1. Mix the breza sugar with the pectine.
  2. Defrosed the fruit and add the mix of pectine sugar.
  3. Cook the jam until you reach 110°C.
  4. Add the lemon juice and zest.
