Cocoa Old Fashioned Donuts

Ingredients: Cocoa Old Fashioned Donuts

  • 50 g
    Egg yolk
  • 50 g
    Whole egg
  • 10 g
    Nielsen Massey Vanilla Extract
  • 40 g
    DOP Isigny Butter
  • 225 g
    sugar
  • 355 g
    sour cream
  • 12 g
    salt
  • 18 g
    baking powder
  • 4 g
    baking soda
  • 550 g
    All Purpose Flour
  • 40 g
    DCP-22EXBRU

Preparation: Cocoa Old Fashioned Donuts

  1. Soften the butter with the paddle
  2. Add sugar and mix to combine - do not cream
  3. Slowly incorporate yolks, eggs, and vanilla. Mix until homogeneous
  4. Add sour cream all at once and mix to combine
  5. Add sifted dry ingredients and mix just until no dry spots remain. Finish mixing by hand if necessary
  6. Wrap tightly in plastic and refrigerate minimum 8 hours but preferably overnight
  7. Roll dough to 12mm and portion using the desired rings of your choosing.
  8. Heat neutral oil to 350 F/176C
  9. Fry rings 90 seconds per side, then remove to a wire rack to cool completely

Cocoa Glaze

Ingredients: Cocoa Glaze

Preparation: Cocoa Glaze

  1. Combine wet ingredients in the bottom of a medium size bowl
  2. Sift sugar and cocoa powder over and mix to combine
  3. Blend with a hand blender to remove any lumps
  4. Dip donuts into glaze and allow excess to drip off over a wire rack
  5. Decorate with Mona Lisa Dark Curl Shavings
