Meet our 2025 JCM Finalists - Elspeth Robertson
We are excited to introduce you to Junior Chocolate Masters 2025 Finalist Elspeth Robertson, chocolatier and owner of Calluna Chocolate.

Where did it all start? How did you fall in love with cooking, pastry and chocolate?
Due to an accident, I temporarily couldn’t use my dominant hand . I was prescribed physiotherapy and one of the exercises was baking at home to use my hand. It was from there I gained a real passion for it, dedicating a huge portion of my time to learning and bettering my skills.
What or who is your greatest source of inspiration?
I like to take inspiration from my childhood and modernise it. By using classic flavours and altering them to make some new and exciting dishes thrills me and makes me feel like a little part of me is in every dish. I feel this helps for me to get some real passion into the product.
What has been your favourite culinary creation so far?
For my exam a few years ago I was tasked with making chocolates. I took inspiration from my Scottish clan heritage and family and made some beautiful bars that invoked the highland flavours .
What motivated you to enter the Junior Chocolate Masters competition?
I wanted to test myself and further my skills as well as make industry connections with other like minded young chocolatiers.
What does the theme “Best of British” evoke to you?
As someone from Kent, best of British means, countryside. Long walks and berries in bushes, trees and nature is what makes it home to me. At the same time, I have a lot of childhood memories being by the sea, exploring, fossil hunting and days out do Britian is Britain without a bit of both.
How are you preparing for the competition?
Practicing a lot and talking the ideas through with friends and family is helping to develop my ideas and further my concept.
What is your favourite chocolate? Why?
I love everything dark chocolate. The complexity and variation with it is very exciting to me.
Any ambition for the future you'd like to share with us?
I would like to finish setting up my own business. I’ve put in a lot of the leg work for it already but I would like to take it over the line now.
