Course objective: Two days of practical
advice and application, exploring the creation of individual French
entremets dessert cakes which offer pure style and
indulgence. Each dessert cake will include different
textures, layers of sponge, mousses and will be glazed to
perfection. A special feature will be the creation of a
chocolate bouquet, which can be used to enhance celebration cakes
or as a table decoration.

Beverley has played a key role in the development of the Barry
Callebaut CHOCOLATE ACADEMY™ center over the past 5 years. She has
been involved in the CHOCOLATE ACADEMY™ center from conception to
creation of a range of innovative courses for confectionery, bakery
and hotel and restaurant sectors.
Beverley has always been passionate about the patisserie profession
and early in her career relocated to Switzerland and Luxembourg in
order to work with world renowned chefs such as Ewald Notters and
in esteemed establishments to advance her creative skills.

CHOCOLATE ACADEMY™ center Banbury, UK
The UK CHOCOLATE ACADEMY™ center is based in Banbury, Oxfordshire and is a ‘State of the Art’ purpose-built training environment with eight individual work stations, allowing for one-to-one, hands-on tuition. The Academy is situated adjacent to the factory allowing easy access for tours of the Barry Callebaut plant.
Our courses have been designed to offer practical and theoretical help for the novice chocolatier through to the chocolate artisan, pastry chef, confectioner, baker, caterer and lecturer.
We are extremely proud to have some distinguished chefs from both the United Kingdom and Europe to help run our courses, all of whom have extensive knowledge, expertise and experience in the field of chocolate.
